Simple Sweet & Sour Chicken – serves 2

2x chicken breasts, cut into strips
1 small onion, finely chopped
1 carrot, thinly sliced
1 red pepper, de seeded and sliced
150g canned pineapple pieces in natural juice- reserve 6tbsp of the juice
1 tbsp soy sauce
2 tbsp white wine vinegar
*heat some oil in a wok, add the chicken strips and stir fry for a couple of minutes.
*add the onion, carrot and pepper and cook for 5 minutes until soft and chicken cooked through.
*Add the Pineapple, reserved juice, soy sauce, vinegar and seasoning.
*blend the cornflour with 2 tbsp of cold water and stir in the mixture. Cook for 1-2 minutes until thickened .
*add any extra soy sauce if needed
*serve with rice or noodles
