COOKING WITH LOIS – Salmon Noodle Soup

Salmon Noodle Soup- serves 2 


2 salmon fillets

Sweet chilli sauce 

2 packs of rice noodles

1 chicken stock pot 

1tbsp Soy sauce 

Fish sauce 

1 garlic clove, finely cut

1tsp ginger purée / grated ginger

1 red chilli, deseeded and chopped.

Mixture of veg (carrot ribbons, pepper, mange-tout, mushroom, bean sprouts etc)


*Preheat oven to 180 and cook the salmon fillets for 12-15 minutes with a drizzle of sweet chilli sauce

*bring 500ml of water to the boil and add chicken stock

*next add the soy sauce, fish sauce, spring onion, garlic, ginger and chilli.  Stir to combine

*add your chosen veg and allow to cook for 3-5 minutes

*add the noodles to the broth and cook for 1-2 minutes until soft.

*serve in large bowls with your cooked salmon on top
