Cooking With Lois – Chicken Salad
Chicken Salad – serves 3/4
Ingredients
225g fusilli pasta
125g broccoli cut into small florets
175g cherry tomatoes, halved.
1 x 198g tin sweet corn
125g cooked chicken, cut in to small pieces.
2 spring onions, finely sliced
Honey & Soy Dressing
4 tbsp olive oil
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tbsp runny honey
1/2 tsp caster sugar
Method
*cook the pasta according to pack instruction. Add the broccoli to the last 4 minutes.
*whisk together all the ingredients for the dressing.
*drain the pasta / broccoli and then combine with the tomatoes , sweet corn, onion, chicken and salad dressing .
