This Week were making Chicken & Chorizo Jambalaya
2 chicken breasts chopped
1 red pepper
Any other veg (mushrooms, green beans, peas etc)
2 garlic cloves
250g long grain rice
400g chopped tomatoes
350ml chicken stock
1tbsp smoked paprika
1tbsp Cajun seasoning
*cook the chopped chicken in a little oil for around 5 minutes until golden.
*remove from the pan and set aside.
*cook the onion gently for 3-4 minutes until soft. Add pepper and any other veg your using with the chorizo and seasoning / spices . Cook for a further 5 minutes.
*add the chicken back in along with the rice, chopped tomato and stock.
*cover and simmer for 20-25 minutes until rice is cooked.
